We’re getting to the end of May and for me, that means one thing, summer drink prep!

I love gin in all shapes and forms, so today I’m sharing my favourite rhubarb gin recipe. I’ve fiddled with this recipe and this is my personal favourite, but to be honest, you can change the measurements to get the flavour you like. I love mine a little sweeter and with a little less ginger so it has a nice warmth but isn’t too over-powering. Have a try and let me know what you think!

Ingredients:

  • 75 cl gin
  • 1kg rhubarb
  • 500g sugar
  • 100g ginger

Directions:

Okay, this is super easy. All you need to do is cut up the rhubarb and ginger into chunks, then throw everything in a tub! Leave it for 4 weeks in a dark place and try turning it every few days. The other thing you can do is leave out the ginger and add a bay leaf instead. I love this with the apple and blackberry gin because it adds a really nice aromatic, so try it and let me know what you think!
